Now,   almost   30   years   after   that   hopeful   commitment,   we still   share   that   same   optimistic   attitude   and   respect   for one     product:     Traditional     Desalted     Cod,     which     now occupies   the   place   it   deserves   in   our   gastronomic   culture. And,    in    our    own    modest    way,    we    have    made    our contribution. Today   we   also   offer   our   cod   to   meet   each   restaurateur’s particular   needs.   This   way,   they   can   use   their   culinary skills   to   enhance   it   and   ensure   that,   as   in   the   past,   their customers    can    enjoy    this    traditional    and    characteristic flavour   at   their   tables.   A   flavour   that   is   so   much   a   part   of our Mediterranean culture. Ràfols   is   a   family-run   business   that   has   specialized   in   the preparation of Traditional Desalted Cod for over 70 years. At   the   end   of   the   1940s,   Ramón   Ràfols   Santacana   entered the   salted   fish   business   with   a   retail   shop   in   Barcelona. These   were   the   hard   times   following   the   Spanish   Civil War.   When   cod   was   considered   to   be   the   poor   man’s   fish, the fish for inland consumption. His   son   Jordi   Ràfols   took   over   in   the   1970s   and,   while   he carried   on   the   retail   business   at   the   beginning,   he   soon began    to    serve    restaurants    seeking    cod    that    was    top quality,   desalted   and   ready   to   cook.   With   the   growing demand   for   desalted   cod   in   restaurants,   around   1990   he decided to devote all his attention to this sector. He    channeled    all    his    energy    and    dedication    into    this challenging   new   option.   The   experience   and   know-how of   his   entire   team   were   clear   but   so   was   something   more important:    the    excited    optimism    of    tackling    a    new project.
